Heavy consumption of eight common preservatives found in processed foods is associated with substantially higher rates of high blood pressure and cardiovascular disease, according to a new observational study that adds to a growing body of evidence linking industrial food additives to long-term heart risks.
The research identified eight widely used preservatives linked to hypertension, a condition that affects nearly half of American adults and is a leading risk factor for heart attack, stroke, and kidney failure. The additives are staples of the modern food supply, appearing in everything from packaged baked goods and cured meats to sauces, beverages, and shelf-stable meals designed to resist spoilage during transport and storage.
Because the study was observational, the researchers emphasized that it cannot prove the preservatives directly caused the elevated rates of disease. Observational designs track patterns in large populations over time but do not randomly assign participants to different diets, leaving open the possibility that other factors — such as overall diet quality, socioeconomic status, or existing health conditions — contribute to the association.
Still, the findings carry weight because the additives in question are so pervasive. Preservatives extend shelf life, prevent the growth of harmful microorganisms, and reduce food waste, making them economically important to the food industry and convenient for consumers. That ubiquity means even modest individual risks could translate into significant public health consequences at the population level.
The study fits into a broader scientific conversation about the cumulative effects of ultra-processed foods, which now account for a majority of calories consumed in the United States. Previous research has linked such diets to obesity, type 2 diabetes, and cardiovascular disease, but isolating the role of specific ingredients has proven difficult because processed products typically contain multiple additives, along with high levels of sodium, sugar, and saturated fat.
Hypertension is often called a silent condition because it produces few obvious symptoms while quietly damaging blood vessels, the heart, and other organs over years. Reducing its prevalence is a central goal of public health policy, and dietary change is one of the most effective levers available to clinicians and patients alike.
The researchers did not establish a mechanism by which the preservatives might raise blood pressure, and the study does not offer guidance on safe consumption thresholds. That gap leaves regulators, food manufacturers, and consumers without a clear standard for how much of any given additive might be problematic.
What the findings do suggest is that the relationship between processed food and heart health may involve more than salt, sugar, and fat alone.
