In the ongoing search for extraterrestrial intelligence, scientists have primarily focused on detecting technological signals — radio waves, laser pulses, or megastructures. But a new line of thinking proposes that we may be overlooking signs of alien life that are neither strictly technological nor biological. Among the surprising candidates: bread.
The idea is that bread, as a processed food made from ground grains, water, heat, and often fermentation, requires a level of knowledge and tool use that does not occur naturally. According to researchers, bread could be considered a « signature of intelligence » because its production involves multiple steps of transformation that no single organism can accomplish alone. It represents a deliberate alteration of natural ingredients by an intelligent agent.
This concept broadens the definition of what constitutes a technosignature — traditionally understood as any measurable sign of technology from another civilization. Radio emissions, atmospheric pollutants, and artificial structures are the usual targets. But the new proposal argues that many products of intelligent activity may not fit the conventional image of advanced machinery. Instead, they could be everyday items like baked goods, fermented beverages, or processed materials that leave a distinct chemical or physical trace.
The reasoning draws on the fact that on Earth, bread is a human invention that emerged after the development of agriculture and the domestication of grains. It is not a natural substance; it requires grinding, mixing, and heating, often using controlled fire or ovens. Fermentation, which gives bread its rise and flavor, is itself a biological process harnessed by human intelligence. As such, the presence of bread on a planet — or its chemical byproducts in an atmosphere — could indicate a civilization capable of agriculture, cooking, and food processing.
Researchers point out that looking for such « non-technological » signatures could expand the search parameters of SETI (Search for Extraterrestrial Intelligence) programs. Currently, most SETI efforts rely on the assumption that alien civilizations will communicate via electromagnetic waves, but that assumption may be too narrow. If alien societies develop along different paths, their most detectable signs might not be radio signals but rather the residues of their daily activities.
Bread is just one example. Other potential signatures could include cheese, beer, wine, or other fermented products, as well as processed ceramics, metals, or fibers. Each of these involves transforming raw materials through techniques that require planning, knowledge, and often communal effort. The key is that these artifacts are not naturally occurring and are unlikely to be produced by simple biological processes alone.
The proposal also addresses a common criticism: that such artifacts would be too small or too localized to detect from interstellar distances. However, researchers argue that large-scale bread production, especially in an industrial civilization, could release characteristic compounds into the atmosphere. For instance, the baking process emits volatile organic compounds that might be detectable by advanced telescopes. Similarly, the widespread cultivation of grain crops would leave a distinct vegetation signature on a planet's surface.
This perspective challenges the traditional dichotomy in astrobiology between « biological » and « technological » signals. It suggests a middle ground: « intelligent » artifacts that are not necessarily built from metal or electronics but still reflect the presence of a society with knowledge and skills. The idea is that any material transformation that requires multiple steps and cannot be explained by natural or simple biological processes could be evidence of intelligence.
While the concept remains hypothetical and no such signatures have been detected, it encourages scientists to think creatively about what to look for. Future space telescopes, such as the planned Habitable Worlds Observatory, could be designed to search for chemical signatures of processing and manufacturing, not just biosignatures or radio transmissions.
The proposal is part of a growing recognition that the search for extraterrestrial life must consider a wider range of possibilities. As astrobiology matures, researchers are increasingly open to the idea that alien intelligence may manifest in ways we have not yet imagined. Bread, in this context, becomes a humble but powerful symbol of that expanded thinking.
